I'll bet the reason you see milk as the state beverage so often is because of the powerful dairy lobbies in each state. Yeah and the powerful water lobby in Indiana explains their choice too.
Obvious choices IMHO:
Florida....Orange juice!!
Kentucky.....bourbon
Georgia....moonshine
Washington....apple juice
Texas....Texas tea
Wisconsin....MILK dammit!

I would think Colorado's would be Coors, no I am not bowing to the macrobrew industry and shunning Colorado's tasty micros (best in the US!), but Coors provides history and just speaks Colorado to many beer drinkers.
