#1 - this is one ugly city when viewed from the highway... be aware. THe older neighborhoods are pretty nice though.
Stuff to do in the winter... stuff I've done in bold.
beachcombing/hiking on Padre Island/Mustang Island
walking tour of downtown & surrounding neighborhoods (self guided)
Texas State Aquarium
Tour the USS Lexington
There are some Eco-tours in the area
deep sea fishing, if you are into that
Selena Museum (never been, but a friend really liked it... I don't know how she has her own museum)
Asian Cultures Museum
Personally, I'm not a huge fan of Corpus Christi. The seawall area is very nice though, and the downtown is improving. There's a couple of live music spots, which are mostly Texas Swing & Country (think George Strait more than Keith Urban).
