    Share Your Recipes

    Similar to the description of turkeys, Hanukkah is upon us.

    What's your favourite recipe for latkes and other festive foods?

    Personally, I like them with the potatoes grated really fine and the patties pressed really thin, with home made aple sauce (from my parent's own trees) and real (not artificailly flavoured) sour cream. And they have to be deep fried, none of that baking because of concerns over calories and fat.

    I like the potatoes grated a bit thicker, maybe 3-5 centimeters, and an inch, er, 1-2 centimeters long. Homemade applesauce, mmmmm, that's the stuff. I sometimes make latkes when backpacking - no waste to carry out.

    Here's a sweet potatoe recipe:
    Cook 3 lbs. sweet potatoes, then peel and mash with 2 eggs, 1/4 butter and 1/2 cup milk, and place in a casserole dish. In another bowl, combine 1/4 cup butter, 1/4 cup flour, 2/3 cup brown sugar, and 1 cup sliced almonds. Sprinkle over the potatoes and then bake at 350 degrees for one hour.

    Latkes

    Shredded potatoes and onion (not too finely shredded). I don't form mine too thin, and I fiy them in oil in an iron skillet. We use good sour cream, too. You can't eat just one!

    They are also good with roast beef and gravy. Tonight we'll have some with turky leftovers.

    I thought you were going to give a sweet potato latke recipe. Last time I was in montreal we ate a t club shack and they had sweet potato french fries on the menu drizzled in carmelized (sp?) brown sugar and maple syrup. hmmm.

    I don't really like onions in my latkes.

    I don't think I've ever had latkes before. But if somebody would like to post their recipe, I'd like to trying making some.

    my recipe is not real scientific

    1) grate 4-5 potatos (debate on grating above)
    2) Mix with flour(1/2 - 1 cup) and an egg or two to clump together
    3) make patties - 2-3 inches across, 1/4 - 1/2 inch thick
    4) cook in boiling oil until outside is a nice brown and middle is cooked all the way through

    5) serve with apple sauce and sour cream. I prefer them as sides for dipping or smearing on top.

    As mentioned some people like a bit of onion (1/4 small onion) or garlic in them, I have also had them with paprika (gross)

    Tranplanner you can go to united bakery in forest hill ( heard they moved there from Spadina) for them, or try the bagel (if its still there) on college. Frans probably has them too.

    Is the sign for fran's still not up? I thought it was when I was in TO in september.

    Or try any eastern european restaurant this week. I think futures (Bloor West) has them on the menu.

    The sign might still be there (depending which location you're talking about), but I'm sure that all the Fran's are gone now.

    Dirty Rice

    I bet Planderella knows this one... It's a Coonass recipe.

    1lb Chicken Livers
    1/2 lb. Burger Meat
    1/2 lb. Ground Hot Sausage
    1 1/2 cp. Rice
    1 Bell Pepper
    1 Yellow Onion
    2 cloves Garlic
    Black Pepper
    Red Pepper
    Any other pepper you have laying around
    Majoram
    Thyme
    Any other spices you really like

    Firs', you make you a roux. If you don' know how, learn! Any good recipe start wit' a good roux! Den... brown all dem meats real good. Cook dat rice... and you bes' know how to do it right. Chop all dem dere veggies, dump most of the grease out, (but not in da 'ol sink, der) den fry up dem veggies 'til dey sof'. Mix it all about... den spice it up like you like. It'a feed 'bout six. 'Less you got chirren like mines, den dey eat it all up.

    In case anyone was curious about Mastiff's terminology...

    Coon Ass:
    Cajuns

    French-Canadian Exiles who migrated to Louisiana. Fur traders. Originated during WW2 when the French soldiers heard the Cajun-French American forces speaking a very old version of the French language peppered with slang, they called them 'conasse', which translates roughly to mean 'cheap whore'. Of course the other non-Cajun members of the American forces heard this as "Coon Ass", and it stuck.

    Hmmmmm........actually, I just use the Zataran's Dirty Rice mix....just add meat and spices. It's sooooo much easier.

    I have a little story about that... My Father, who detests... no, dispises... no... well, just cannot stand chicken livers ate it one day.

    In fact, that year when I brought it for Thankgiving, he loved it so much, he ate 3 or 4 servings! I told him the ingredients several days later, and he swore he'd never touch it again.

    That's just being stubborn. If you don't know it's in there, you won't "taste" the livers...

    Mmmmm.... Chicken livers. Great just breaded and fried, served with latkes and apple sauce. Too bad I have about seven pounds of ham and a four pound roast beef sitting in the 'fridge, or I'd be eating them tonight.

    Mastiff notes that it has taken on a meaning on "born and raised in Louisiana" to most people of the area... and Mastiff was *not* implying that Planderella is a cheap whore because she might know of this food.

    My wife makes a thing call Porkora (or something to that effect) The boy and I just call them Hindu Poppers. Kind of a fried hot pepper fritter of the Gods. (I did mean to imply the plural tense) I'll see if I can get the recipe and post it. Delicious.

    We decided that if we ever opened a restaurant we'd call it.....

    The Hindu Hut The New Delhi Deli seemed too obvious.
