Vegetarian Recipes for Irish

Instead of hijacking the NYresolutions thread, I thought I'd just start a new one. So here is my favorite vegetarian breakfast recipe:

Cheese Strata:
10 slices of bread, cut into cubes
8 eggs
1 - 2 c. grated cheddar cheese
1 1/2 c. milk
1 onion
1 red pepper
1 green pepper
8 oz mushrooms
1/2 c. diced tomatos
1/2 c. chopped spinach
1 chopped garlic clove
salt and pepper to taste

Spray a 9x13 pan with nonstick spray. mix up the eggs and milk in a large bowl, combine with rest of the ingredients, then dump into pan. Let set in fridge overnight (or for at least a couple hours), then bake at 350 for 60-70 minutes, or until firm.

Delicious! Also, if you are a meat eater, is wonderful with ground italian sausage, bacon or ham. You can pretty much dump whatever you like into it.


Broccoli Custard

This is one of my favorite things that my mom used to make:

2 pkgs (10 oz each) frozen Broccoli – chopped.
1-1/4 tsp salt
1 cup shredded cheese – jack or cheddar
1/8 tsp pepper
1 clove garlic – chopped fine
¼ cup chopped parsley
¼ cup prepared biscuit mix (Bisquick or other)
4 eggs well beaten
1 Tbsp butter or margarine

Defrost, but do not cook packages of frozen broccoli (in microwave 2-3 min.) Drain well in colander.
Combine broccoli, cheese, pepper, garlic, parsley and biscuit mix. Stir in well beaten eggs. Blend well. Melt butter in ring mold (small baking dish will do, ring is best) and spread over entire surface. Pour broccoli mixture into mold. Cook uncovered in microwave for 8-10 minutes, or until mixture appears to set and begins to move away from sides.
Allow to rest for 5 minutes. Unmold on platter. You can fill the center with baby tomatoes, sliced carrots or rice or anything else you are serving at meal. Serves 6-10 as side dish depending on how much they like broccoli.
